I bought a large head of cauliflower recently and just yesterday decided to prepare it. I decided to do it the simple way, steaming. Here is what I did to fix it and enjoy some real good eating.

Steamed Cauliflower

1 large head of Cauliflower

Salt & Pepper

Cheese-your choice (shredded or sliced)

You'll need a double boiler with holes in the top pan or use a collander over a pan of hot water. Just put about an inch and a half of water in the lower pan and bring to a boil. Turn the burner down so the water just continues to boil slowly.

Turn the head of cauliflower upside down and cut out part of the stem, removing the leaves. You don't have to cut deep, just far enough so all the leaves fall away. Wash the cauliflower and sprinkle the top with salt & pepper.

Place the cauliflower in the upper pan and cover. Let this steam about 25 minutes. Take the cover off and check with a fork to see if it goes into the head of cauliflower showing it is cooked. Then put cheese all over the top of it and put the cover back on for a few minutes till the cheese is melted.

Remove the entire head of cauliflower and cut into wedges. It's a great way to serve it.

You actually could use additional seasonings that you enjoy also. Cooking it this way actually gives you more food too. When most people clean cauliflower, they only seem to use the flowerettes, this way you eat the stems also that are very tender.
