It's still pretty cold outside so a good bowl of soup always hits the spot. I have made soup with this squash before but this recipe that I got from my friend, Sandy Gensen, is much better than my own, I think. It really is good and rivals any like soup that you will find in Grand Rapids. Give it a try.

BUTTERNUT SQUASH SOUP                     

1 butternut squash peeled and cut up

1 sweet potato or large baking potato peeled & cut up (I used 2 med)

3 large leeks cut up (white parts only)

3 garlic shallots minced (reg shallots are OK, even mild onion)

1 stick butter to sauté all of the above to a soft consistency. (I used olive oil & ½ stick butter)

I sautéed’ all this in a large skillet until the veggies were softened.

Add:

Salt and pepper 

1 tsp. cumin 

1 tsp. curry powder

32 oz. chicken broth/stock (or Veggie broth)

Cook until all is soft in the liquid.  Process in a blender/food processor to a smooth consistency. Put into a crock pot to heat but not on high or it will break the cream. Just keep it nice & warm.

Add:

2 cups heavy cream (whipping cream) When making it a second time, I used 1 cup of cream & 1 cup of fat free ½ & ½. I could not tell the difference.

Croutons and parsley for garnish. (I used day old bread, cut in cubes, & sautéd’ in butter& olive oil. Sprinkle with Garlic Powder/Salt & Parmesan Cheese.)
